  • 1/2 cup fresh lime juice
  • 1/4 cup orange juice
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1 tsp smoked paprika (optional)
  • 12 jalapeños, finely chopped (optional for heat)
  • Salt and black pepper to taste
  • 1 lb boneless, skinless chicken breasts or thighs
  • Handful of fresh cilantro, chopped

Instructions

 

  1. Prepare the marinade: In a large bowl, whisk together lime juice, orange juice, olive oil, chili powder, cumin, oregano, garlic, and paprika. Add chopped jalapeños and cilantro.
  2. Marinate the chicken: Place the chicken in a ziplock bag or shallow dish. Pour the marinade over it, ensuring even coating. Seal and refrigerate for 2 to 6 hours.
  3. Preheat the grill: Set the grill to medium-high heat. Lightly oil the grates to prevent sticking.
  4. Grill the chicken: Remove the chicken from the marinade and place it on the grill. Cook for 6-8 minutes per side or until the internal temperature reaches 165°F (75°C).
  5. Rest and serve: Let the chicken rest for 5 minutes before slicing. Serve with Mexican rice, guacamole, or pico de gallo.

Notes

 

  • Do not marinate for more than 12 hours to avoid a mushy texture.
  • For oven baking, preheat to 400°F (200°C) and bake for 20-25 minutes, flipping halfway.
  • Substitute chicken with shrimp, steak, or tofu for variation.
