This easy Breakfast Puff Pastry is made with scrambled eggs, sharp cheddar cheese, and sliced ham, all wrapped in buttery puff pastry. It’s the perfect savory start to your morning and a great way to feed a crowd with minimal effort.

Ingredients

  • ¼ cup all-purpose flour (for rolling)
  • 1 sheet puff pastry, thawed (per package instructions)
  • 6 oz deli-sliced ham
  • 1 cup sharp cheddar cheese, shredded
  • 2 cups scrambled eggs (approx. 810 eggs, cooked your way)
  • ¼ tsp kosher salt (for topping)

For Egg Wash:

  • 1 large egg
  • 2 tbsp water

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Lightly flour your surface and roll the puff pastry into a 14-inch square.
  • On each long side, cut 1-inch slits from the edge to the fold line, leaving the center untouched (this is for the filling).
  • Layer the ham down the center of the pastry, followed by the cheese, then scrambled eggs.
  • In a small bowl, whisk the egg and water to make the egg wash.
  • Brush the pastry borders with the egg wash. Starting at one end, fold the strips over the center, alternating sides to create a braid.
  • Transfer to baking sheet. Brush entire pastry with egg wash and sprinkle with kosher salt.
  • Bake for 20–25 minutes, or until puffed and golden brown.
  • Let cool slightly before slicing and serving.

Notes

  • You can substitute ham with bacon or sausage.
  • To make ahead: Assemble and refrigerate for up to 8 hours before baking.
  • For single servings, cut puff pastry into squares, fill, fold corners to center, and bake.
