- 1 quart jar of canned venison (including juices)
- 2 medium potatoes, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 medium onion, diced
- 4 cups beef broth
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Prep the Vegetables: Peel and dice the potatoes, carrots, and onion. Chop the celery.
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the onion, garlic, and celery. Cook until softened, about 3-4 minutes.
- Add Vegetables and Seasoning: Stir in the potatoes, carrots, thyme, paprika, salt, and pepper. Cook for 2 minutes to coat the vegetables with seasoning.
- Add Broth and Venison: Pour in the beef broth and bring to a boil. Reduce heat to a simmer and cook until the vegetables are tender, about 15 minutes.
- Add Canned Venison: Stir in the canned venison, including its juices. Simmer for an additional 5-10 minutes until heated through.
- Serve: Ladle into bowls and serve hot, garnished with fresh parsley if desired.

- For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the stew during the last 5 minutes.
