This carnitas breakfast recipe with eggs is the perfect way to start your day with bold flavors and a hearty meal. Crispy carnitas are paired with perfectly cooked eggs and topped with creamy avocado crema for a satisfying breakfast that’s easy to make and full of protein.

For the Carnitas Breakfast:

  • 2 cups cooked carnitas (leftover or freshly made)
  • 2 large eggs
  • 2 tbsp avocado oil or ghee
  • 1/2 tsp sea salt (adjust to taste)
  • Freshly ground black pepper (to taste)
  • Sliced radishes, lime wedges, and chopped cilantro for garnish

For the Avocado Crema:

  • 1 ripe avocado, peeled and pitted
  • 1/4 cup coconut milk or heavy cream
  • Juice of 1/2 lime
  • 1/4 tsp sea salt (or to taste)
  • 2 tbsp fresh cilantro leaves

Instructions

1. Prepare the Avocado Crema:

  1. In a blender or food processor, combine avocado, coconut milk (or cream), lime juice, salt, and cilantro.
  2. Blend until smooth. Add a splash of water if needed to thin the consistency. Set aside.

2. Crisp Up the Carnitas:

  1. Heat a cast iron skillet over medium-high heat.
  2. Add 1 tbsp of avocado oil or ghee, then spread the carnitas in a single layer.
  3. Let them cook undisturbed for 3 minutes until crispy, then stir and cook for another 2 minutes. Remove from heat.

3. Fry the Eggs:

  1. In the same skillet, add the remaining 1 tbsp of oil.
  2. Crack the eggs directly into the pan and cook until the whites are set but the yolks remain runny. Spoon hot oil over the whites for even cooking.

4. Assemble and Serve:

  1. Plate the crispy carnitas first.
  2. Top with a fried egg and drizzle with avocado crema.
  3. Garnish with radishes, lime wedges, and cilantro. Serve hot and enjoy!

Notes

  • Leftover carnitas work best for this recipe since they crisp up quickly in the pan.
  • If you prefer scrambled eggs, cook them separately and serve over the carnitas.
  • Add extra toppings like pickled onions, queso fresco, or salsa for more flavor.
