  • 2 cups mixed vegetables (fresh, frozen, or canned)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup uncooked pasta (elbow, shell, or ditalini)

Optional Add-Ins:

  • A splash of vinegar or lemon juice for brightness
  • A pinch of red pepper flakes for spice
  • A sprinkle of Parmesan cheese for richness

Instructions

Step 1: Prepare the Ingredients

  • Chop the onion and garlic.
  • Open the canned tomatoes and measure out the broth and seasonings.

Step 2: Brown the Meat

  • Heat a large pot over medium heat.
  • Add the ground beef and cook until browned, breaking it apart with a spoon.
  • Drain excess grease if necessary.
  • Stir in the onion and garlic and cook for another 2-3 minutes until softened.

Step 3: Add Liquids and Vegetables

  • Pour in the beef broth and diced tomatoes.
  • Add the mixed vegetables, Italian seasoning, Worcestershire sauce, salt, and pepper.
  • Stir well and bring to a boil.

Step 4: Simmer the Soup

  • Reduce the heat to low and let the soup simmer for 15 minutes.
  • Stir occasionally to blend the flavors.

Step 5: Add Pasta

  • Stir in the uncooked pasta and continue cooking for another 8-10 minutes, or until the pasta is tender.

Step 6: Taste and Serve

  • Remove from heat and adjust seasoning if needed.
  • Serve hot with crusty bread, fresh herbs, or shredded cheese.

Notes

  • If freezing, omit the pasta and add it when reheating to maintain texture.
  • Substitute rice, quinoa, or potatoes instead of pasta if desired.
  • For a vegetarian version, replace ground beef with lentils or chickpeas and use vegetable broth.
  • Store leftovers in an airtight container for up to 4 days in the refrigerator or 3 months in the freezer.
