- 2–3 ripe bananas (mashed, about 1 cup)
- 2 cups all-purpose flour (or whole wheat flour)
- ½ cup sugar (brown or granulated)
- 2 eggs (or ¼ cup applesauce per egg as a substitute)
- ⅓ cup melted butter or vegetable oil
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon (optional, for extra flavor)
- ½ cup chocolate chips or chopped nuts (optional)
Step 1: Prepare the Ingredients
- Mash the bananas until smooth.
- Lightly grease the bread machine pan with butter or non-stick spray.
Step 2: Add Ingredients to the Bread Machine
- First, add wet ingredients: Mashed bananas, eggs, melted butter (or oil), and vanilla extract.
- Next, add dry ingredients: Flour, sugar, salt, cinnamon (if using).
- Finally, add leavening agents: Baking powder and baking soda last.
Step 3: Select the Correct Bread Machine Setting
- Use the “Quick Bread” or “Cake” setting (bakes without kneading).
- If your machine doesn’t have a quick bread option, use the shortest cycle and disable kneading.
Step 4: Let the Machine Bake the Banana Bread
- Press START and allow the machine to run its full cycle.
- Avoid opening the lid while baking.
Step 5: Check for Doneness & Cool the Bread
- Insert a toothpick into the center—if it comes out clean, the bread is done.
- Let the loaf cool in the machine for 10 minutes, then transfer to a wire rack.
Notes
- For extra moisture, replace ½ of the butter/oil with Greek yogurt or applesauce.
- Want a richer flavor? Use brown sugar instead of granulated sugar.
- Make it dairy-free: Swap butter for coconut oil and use non-dairy milk instead of eggs (flax eggs work great!).
