For the Pasta:

  • 1 lb elbow macaroni (or pasta of choice)
  • 1 teaspoon salt (for boiling water)

Optional Toppings:

  • ½ cup panko breadcrumbs
  • 2 tablespoons melted butter
  • 1 tablespoon Parmesan cheese (grated)

Instructions

  • Cook the Pasta:
    • Boil a large pot of salted water. Add macaroni and cook until al dente (8-10 minutes). Drain and set aside.
  • Make the Sauce:
    • Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes.
    • Gradually add milk while whisking. Simmer for 5 minutes until thickened.
    • Remove from heat and stir in cheddar, Gruyère, Parmesan, garlic powder, smoked paprika, salt, and pepper.
  • Combine:
    • Mix cooked pasta with the cheese sauce until well-coated.
  • Bake (Optional):
    • Preheat oven to 375°F (190°C). Transfer mac and cheese to a baking dish.
    • Combine breadcrumbs, melted butter, and Parmesan. Sprinkle on top.
    • Bake for 20 minutes until golden and bubbly.
