For the Short Ribs:

  • 34 lbs beef short ribs
  • 2 tbsp oxtail seasoning
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil (for searing)
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups beef broth (or red wine)
  • 2 sprigs fresh thyme

Instructions

  1. Prepare the Ribs

    • Pat the short ribs dry and trim any excess fat.
    • In a bowl, mix oxtail seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper.
    • Rub the spice mix generously over the ribs and let them marinate for at least 2 hours (or overnight for best results).
  2. Sear the Ribs

    • Heat olive oil in a Dutch oven over medium-high heat.
    • Sear the ribs on all sides until browned, then remove and set aside.
  3. Cook the Vegetables

    • In the same pot, add onions, garlic, carrots, and celery. Sauté until softened.
  4. Braise the Ribs

    • Pour in beef broth (or red wine), scraping up any browned bits.
    • Return the ribs to the pot, add thyme sprigs, and cover.
    • Simmer on low heat for 2.5 to 3 hours or until the ribs are fork-tender.
