  • 2 cups beef broth
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can sweet corn, drained

Optional Toppings:

  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • Crushed tortilla chips
  • Fresh cilantro, chopped
  • Sliced jalapeños

Instructions

  • Cook the Beef: In a large pot, heat over medium-high. Add ground beef and cook until browned (about 5-7 minutes). Drain excess grease if needed.
  • Sauté Aromatics: Add chopped onion and garlic, stirring for 2 minutes until fragrant.
  • Add Spices: Sprinkle taco seasoning, cumin, chili powder, salt, and pepper. Stir well and cook for another minute to enhance the flavors.
  • Add Liquids & Beans: Pour in diced tomatoes, tomato sauce, beef broth, black beans, kidney beans, and corn. Stir to combine.
  • Simmer: Bring to a boil, then reduce heat to low and simmer uncovered for 20-25 minutes, stirring occasionally.
  • Adjust Consistency: If the soup is too thick, add more broth. If too thin, let it simmer longer to reduce.
