Beef-based discada recipe cooking in a cowboy wok.

Discada Recipe is a traditional Mexican dish featuring a flavorful blend of beef, fresh vegetables, and authentic seasonings, all cooked in a cowboy wok. Perfect for outdoor cooking, this smoky and savory dish is ideal for gatherings, tacos, or a hearty meal.

Ingredients

Scale
  • 1 lb flank steak, sliced
  • 1 lb ground beef
  • 1 beef sausage, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 large onion, sliced
  • 2 tomatoes, diced
  • 2 tbsp cooking oil
  • 1 tbsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 tbsp soy sauce or Worcestershire sauce
  • 1/4 cup beer or beef broth (optional)
  • Fresh cilantro and lime wedges for garnish

Instructions

  • Preheat the Discada Pan – Heat oil in a discada pan or large skillet over medium-high heat.
  • Sear the Beef – Cook flank steak and ground beef until browned. Remove and set aside.
  • Sauté Vegetables – In the same pan, cook onions, garlic, and bell peppers until soft.
  • Add Tomatoes and Seasoning – Stir in diced tomatoes, cumin, chili powder, garlic powder, smoked paprika, salt, and pepper.
  • Reintroduce the Meat – Return the beef and sausage to the pan, mixing well.
  • Deglaze (Optional) – Pour in beer or beef broth to release flavors from the pan.
  • Simmer and Serve – Reduce heat and let the discada cook for 15–20 minutes. Garnish with fresh cilantro and lime. Serve with warm tortillas.

Notes

  • For a spicier version, add diced jalapeños or serrano peppers.
  • Use lean cuts of beef for a lower-fat option.
  • Adjust the seasoning to your taste—more cumin for earthiness, more chili powder for heat.
