Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked long-grain white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 ½ cups chicken broth
  • 1 packet onion soup mix
  • Salt and pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions

1️⃣ Preheat & Prepare
Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish and spread uncooked rice evenly across the bottom.

2️⃣ Mix the Sauce
In a medium bowl, whisk together cream of chicken soup, cream of mushroom soup, and chicken broth until smooth.

3️⃣ Layer the Ingredients
Place chicken breasts over the rice. Season with salt and pepper. Pour half of the soup mixture over the chicken.

4️⃣ Bake Covered
Pour the remaining soup mixture evenly over the rice. Sprinkle onion soup mix on top. Cover tightly with foil and bake for 1 hour and 30 minutes.

5️⃣ Optional Browning & Serving
For a golden, crispy top, remove the foil in the last 15 minutes of baking. Let the dish rest for 5 minutes, then garnish with fresh parsley before serving.

Notes

  • For extra veggies, add chopped carrots, peas, or broccoli before baking.
  • For a richer flavor, substitute ½ cup heavy cream for part of the broth.
  • For a low-sodium version, use reduced-sodium soups and broth.
  • If using brown rice, increase broth to 2 cups and bake for an additional 15-20 minutes.
