  • 2 boneless, skinless chicken breasts
  • ¼ cup honey
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • ½ tsp chili flakes (optional for heat)
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper

For the Roasted Vegetables:

  • 1 cup baby carrots
  • 1 cup Brussels sprouts, halved
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

1️⃣ Preheat Oven: Set your oven to 400°F (200°C).

2️⃣ Prepare the Marinade: In a bowl, mix honey, soy sauce, Dijon mustard, olive oil, garlic, chili flakes, salt, and pepper.

3️⃣ Marinate the Chicken: Coat the chicken breasts with the marinade and let them sit for at least 15-20 minutes.

4️⃣ Roast the Vegetables: Toss baby carrots and Brussels sprouts with olive oil, salt, and pepper. Spread them on a baking sheet.

5️⃣ Cook the Chicken:

  • Heat a cast-iron skillet over medium heat. Sear chicken for 2 minutes per side until golden brown.
  • Transfer chicken to the baking sheet with vegetables and roast for 15-18 minutes or until the chicken reaches an internal temperature of 165°F (75°C).

6️⃣ Glaze & Serve: Brush the chicken with extra honey glaze before serving. Garnish with fresh herbs if desired.
